Avocado Egg Toast
45 Minutes | Serves 4
8 Large Eggs
2 Ripened Avocados Diced
½ oz Fresh Chives Minced
Juice from Half of a Lemon
Garlic Powder to Taste
Kosher Salt to Taste
Coarse Ground Black Pepper to Taste
Optional Toppings: Crumbled Bacon and Hot Sauce
Preheat the oven to 350 degrees.
Spray a loaf pan with nonstick cooking spray. Crack the eggs into the loaf pan. Place the loaf pan in a larger baking dish and fill the baking dish halfway up with water.
Bake on the middle rack of the oven for 30 minutes. Remove the loaf pan from the larger pan and cool for 5 minutes.
Remove the cooked eggs from the loaf pan and chop into small pieces. In a medium-sized mixing bowl combine the eggs, avocado, chives, lemon juice and seasonings. Mix all ingredients together.
Spread on your favorite toasted bread.
