Bananas Foster Pancakes
45 Minutes | Serves 4
Pancake Mix
250 g All Purpose Flour
½ tsp Kosher Salt
3 tsp Baking Powder
½ tsp Baking Soda
3 Tbsp Granulated Sugar
2 Large Eggs
1 cup Milk
1 cup Buttermilk
2 tsp Vanilla Extract
¼ cup Salted Butter Melted
Bananas Foster Syrup
3 Medium-Sized Bananas Cut into Coins
½ cup Dark Brown Sugar Packed
½ cup Maple Syrup
½ tsp Ground Cinnamon
½ cup Rum
¼ cup Salted Butter
To prepare the pancake batter, mix your dry ingredients together. In a separate bowl, mix all wet ingredients together except the butter. Combine the wet and dry ingredients together. Whisk gently a few times while you add the melted butter. Stir all ingredients together slowly. You should have a few lumps that remain. Do not overmix to ensure fluffy pancakes.
Cook the pancakes in small batches over medium heat using butter to grease the pan between batches. When finished, wipe out the pan to make the sauce.
To prepare the Bananas Foster syrup, place the sauté pan on medium heat. When heated, add the butter and brown sugar. Stir together while the butter melts. When the butter is completely melted and fully incorporated with the brown sugar, add the sliced bananas. Stir and coat all bananas. Cook for approximately 1 minute. Add the rum on the outer edge of the sauté pan and ignite to flambé the bananas. Cook until the alcohol burns off completely, stirring occasionally. Add the maple syrup and stir all ingredients together.
