Brazilian Cheese Bread

2 cups Tapioca Flour
¾ cup Milk
¼ cup Extra Virgin Olive Oil
¾ cup Freshly Shredded Whole Milk Mozzarella Cheese
¼ cup Freshly Grated Parmesan Cheese
2 Large Eggs
1½ tsp Kosher Salt
1 tsp Garlic Powder
Preheat the oven to 400 degrees.
Combine all ingredients except the mozzarella cheese in a blender. Blend on medium speed to incorporate all ingredients. Add the mozzarella cheese and pulse the blender a few times to mix all ingredients.
Spray two mini muffin pans (12 cups each) with nonstick cooking spray. Evenly distribute the batter in each muffin pan.
Bake on the middle rack of the oven until puffed and golden brown, approximately 12-14 minutes. Best served fresh out of the oven.
