Broccoli Rabe
30 Minutes |Serves 4-6
2 Bunches Broccoli Rabe Ends Trimmed
5 Garlic Cloves Thinly Sliced
1 Tbsp Granulated Sugar
1 Tbsp Freshly Squeezed Lemon Juice
1 Tbsp Balsamic Vinegar
3 Tbsp Extra Virgin Olive Oil
1 tsp Kosher Salt Plus Extra for Salting the Water
½ tsp Coarse Ground Black Pepper
Place a large pot of salted water on high heat. Fill a large mixing bowl with water and ice.
Drop the broccoli rabe into the boiling water and blanch for 1 minute. Immediately remove and transfer the broccoli rabe to the bowl of ice water to stop the cooking.
After the broccoli rabe has cooled, drain it in a colander. Allow the broccoli rabe to thoroughly drain before proceeding to the next step. You can use a paper towel to absorb additional moisture from the cooling process.
Place a large cast iron skillet or sauté pan on medium heat. When heated, add the extra virgin olive oil. Add the garlic slices and cook for 3 minutes or until the garlic is golden brown.
Add the blanched broccoli rabe, sugar, balsamic vinegar, lemon juice, kosher salt and black pepper. Stir all ingredients together.
Cook for an additional 3-5 minutes or until the broccoli rabe is cooked to desired consistency, stirring frequently.
