Brown Butter Rice Treats

45 Minutes |Serves 6

6 cups Rice Cereal
3 Tbsp Salted Butter Cut into 3 Pieces
1 tsp Vanilla Extract
10 oz Bag Mini Marshmallows
Colored Sugar (Optional)
Writing Icing (Optional)

Place the butter in a 6-qt Dutch oven or stock pot over medium heat. 

When the butter is completely melted and starts to foam, stir gently until the butter turns a caramel brown and has a nutty aroma. This could take 3-5 minutes. 

Add the marshmallows and vanilla extract. Stir all ingredients frequently until the marshmallows are completely melted. 

Remove from the heat and add the rice cereal. Stir all ingredients together until fully incorporated. 

Transfer the contents of the pot to a sheet pan or baking pan sprayed with nonstick cooking spray. 

Spray the back of a cooking spoon or rubber spatula with nonstick cooking spray and use to smooth and evenly distribute the mixture. 

While the mixture is still warm, add colored sugar to represent your favorite team’s colors. 

Allow the mixture to cool for at least 5 minutes before cutting. Cut into desired shapes and decorate with writing icing.
