cottage cheese bagel
60 Minutes | Makes 3 Large Bagels
1 cup 2% Cottage Cheese
1 cup All-Purpose or Gluten-Free 1:1 Flour
2 tsp Baking Powder
1 Large Egg
1 Large Egg Yolk Plus 1 tsp Water for Egg Wash
Everything Seasoning (Optional)
¾ tsp Kosher Salt
Preheat the oven to 375 degrees.
Line a sheet pan with parchment paper and spray with nonstick cooking spray.
Strain the cottage cheese to remove excess liquid. Mix the whole egg and cottage cheese together with a wooden spoon.
In a separate bowl, combine the flour, baking powder and salt. Stir to incorporate all of the ingredients.
Add the flour mixture to the cheese and egg mixture. Mix thoroughly until a smooth dough is formed.
Transfer the dough to a floured work surface. Flour your hands and roll the dough out into a ¾-inch rope. Cut into desired amount of bagels. You can make 3-4 larger bagels or 8 mini bagels.
Join the ends to make a circle and press to seal. Place the bagels on the sheet pan and brush with the egg wash. Sprinkle with everything seasoning or desired topping. Bake on the middle rack of the oven for 30 minutes. Allow the bagels to cool for 10 minutes before serving.
