Herb-Crusted Tilapia
30 Minutes | Serves 6
2½ lbs Tilapia Filet
½ cup Fresh Italian Parsley Minced
2 Tbsp Fresh Rosemary Minced
½ cup Fresh Cilantro Minced
¼ cup Fresh Dill Minced
2 Garlic Cloves Minced
½ cup Gluten-Free Panko Bread Crumbs
¼ cup Grated Parmesan Cheese
1 Tbsp Lemon Juice Plus Extra for Post Baking
¼ cup Plus 2 Tbsp Extra Virgin Olive Oil Plus Extra for Fish
½ tsp Kosher Salt Plus Extra for Seasoning
½ tsp Coarse Ground Black Pepper Plus Extra for Seasoning
Preheat the oven to 400 degrees.
Place the parsley, rosemary, cilantro, dill, garlic, bread crumbs, Parmesan cheese, lemon juice, extra virgin olive oil, kosher salt and black pepper in a medium-sized mixing bowl. Mix all ingredients until fully incorporated.
Spray 2 sheet pans with nonstick cooking spray.
Place the tilapia filets on the sheet pans, being sure to leave space between each filet. Sprinkle kosher salt and black pepper on both sides of all filets.
Drizzle some extra virgin olive oil across the top of all of the filets. Evenly distribute the herb crust across all of the tilapia filets. Gently press and form the herb crust to cover the top of each filet.
Bake on the middle rack of the oven for approximately 10-12 minutes. Remove the pans from the oven when the thicker part of the tilapia filet is 145 degrees.
Splash fresh lemon juice on the fish when finished baking.
