Lemon Cookies
60 minutes | Makes 24 Cookies
Cookie Batter
1¾ cups All-Purpose Flour
½ cup Granulated Sugar
2 tsp Baking Powder
3 Large Eggs
½ cup Canola Oil
1 tsp Lemon Extract
½ tsp Vanilla Extract
Zest of Half a Lemon
Icing for Cookies
1 cup Confectioners’ Sugar
2 Tbsp Milk
½ tsp Lemon Extract
Preheat the oven to 350 degrees.
In an electric mixer on medium speed, whisk the eggs, canola oil and sugar for 2 minutes. Turn the mixer to low speed and add the flour, baking powder, lemon extract, lemon zest and vanilla extract.
Scrape down the edges of the bowl and continue to whisk for 2 minutes.
For each cookie, drop a heaping spoonful of batter on a sheet pan sprayed with nonstick cooking spray. Keep cookies ½-inch apart. Bake for 8 minutes. Let cool for 30 minutes before icing.
Combine all ingredients for the icing and mix thoroughly. Spoon icing onto the center of the cookie, and spread to the edges of the cookie with the back of the spoon. If desired, add colored sprinkles.
Allow the icing to dry for 1 hour before placing cookies in a tin for storage.
