Lemon Spaghetti
30 Minutes | Serves: 4
1 lb Spaghetti
⅓ cup Freshly Squeezed Lemon Juice (Approximately 2 Lemons)
2 tsp Lemon Zest (Zest from Approximately 1 Lemon)
1 Tbsp Fresh Oregano Minced
1½ cups Freshly Grated Parmesan Cheese
2 Tbsp Salted Butter Melted
¼ cup Extra Virgin Olive Oil
Fresh Basil
Freshly Cracked or Coarse Ground Black Pepper to Taste
Place a large pasta pot of generously salted water on high heat.
Combine the extra virgin olive oil, lemon juice, lemon zest, fresh oregano and Parmesan cheese in a large mixing bowl. Whisk all ingredients together.
Cook the pasta al dente. Remove 1 cup of pasta water and set aside.
Use tongs to transfer the pasta directly from the salted water to the mixing bowl. Add the melted butter and the pasta water.
Vigorously mix all ingredients together for 2 minutes or until all ingredients are incorporated and the sauce thickens. You can add more pasta water if you like your pasta with more sauce.
Top each plate with some fresh basil and black pepper.
If you are not able to freshly grate Parmesan cheese and you are going to use bottled Parmesan cheese, cut the amount down to 1 cup. You can add more later if desired.
