peach and corn salad

30 Minutes | Serves 4

4 Ears Corn Kernels Removed
4 Fresh Peaches (White or Yellow) Diced
1 lb Grape Tomatoes Halved
½ Red Onion Diced
1 cup Scallions Chopped
1 cup Fresh Cilantro Minced
Juice from a Whole Lemon
Juice from 2 Whole Limes
½ cup Extra Virgin Olive Oil
Honey to Finish
Kosher Salt to Taste
Coarse Ground Black Pepper to Taste

Combine all ingredients except for the honey in a large mixing bowl. Mix all ingredients until fully incorporated. Drizzle honey on each portion to finish.
