Queso Dip
45 Minutes | Serves 6
¼ lb American Cheese Cut into Cubes
¾ lb Pepper Jack Cheese Cut into Cubes
1 Shallot Minced
2 Garlic Cloves Minced
1 Plum Tomato Seeds Removed, Small Diced
¼ cup Fresh Cilantro Minced
1 Jalapeño Pepper Seeds Removed, Minced
¼ cup Canned Green Chiles
1 cup Light Cream
2 Tbsp Extra Virgin Olive Oil
Preheat the smoker/grill to 275 degrees and set up for direct cooking. Configure your smoker/grill to have a hot side with direct heat and a warm side away from direct heat.
Add the extra virgin olive oil, shallots, jalapeño and garlic in a large cast iron skillet or sauté pan. Place the pan over direct heat. Stir all ingredients together. and Close the lid of the smoker/grill. Cook for 15 minutes.
Move the pan to the warm side away from direct heat.
Add the cheeses, light cream, plum tomatoes and green chiles.
Close the lid and cook for 20 minutes or until the cheese is completely melted and dip is creamy. Stir once halfway through the cooking process.
Gently fold in the cilantro and stir all ingredients together. Keep the pan on low heat or on a warming plate to serve.
