Sautéed Romaine Salad
30 Minutes | Serves 2
1 Romaine Heart Halved, Cored and Cut into Bite-Sized Pieces
3 Garlic Cloves Thinly Sliced
2 Plum Tomatoes Cut into Bite-Sized Pieces
1 Tbsp Fresh Oregano Chopped
½ cup Locatelli Cheese Freshly Shredded
Juice from Half of a Lemon
2 Tbsp Salted Butter
2 Tbsp Extra Virgin Olive Oil
Fresh Cracked Black Pepper to Taste
Place a large sauté pan on medium heat. When heated, add the extra virgin olive oil and garlic slices. Cook for 3-5 minutes or until some of the garlic is golden brown.
Add the butter. After the butter is melted, add the lemon juice. Proceed to add the tomatoes, oregano and Locatelli cheese. Spread the cheese across the bottom of the pan and cook for 2-3 minutes to crisp in some areas.
Add the romaine lettuce and cracked black pepper to taste. Toss all ingredients together constantly for about 30 seconds. You want to quickly warm the salad and slightly wilt the romaine pieces.
Immediately plate the salad and top with additional shredded Locatelli cheese.
