sun dried tomato and basil gnocchi
60 Minutes | Serves 4
1½ lbs Gnocchi
4 oz Sun Dried Tomatoes Finely Chopped
1 Shallot Minced
5 Garlic Cloves Minced
10-12 Fresh Basil Leaves
½ cup Dry White Wine
1½ cups Light Cream
1 cup Shredded Pecorino Romano Cheese
2 Tbsp Extra Virgin Olive Oil
1½ tsp Kosher Salt
1 tsp Coarse Ground Black Pepper
Place a large sauté pan on medium heat. When heated, add the extra virgin olive oil. Add the shallots and garlic. Cook for 2 minutes or until the garlic starts to brown. Add the sundried tomatoes. Cook for an additional 2 minutes, stirring occasionally.
Add the white wine and cook for 1-2 minutes to reduce by at least half. Add the light cream, kosher salt and black pepper. Break up the basil leaves by hand and add to the sauce. Bring to a light simmer and reduce to low heat to hold.
Add the cooked gnocchi and ½-1 cup of pasta water depending on your desired level of thickness and pasta to sauce ratio. Stir all ingredients together.
Turn the heat off completely and add the Pecorino Romano cheese. Stir and serve.
