baked salmon with mango salsa
30 Minutes| Serves 4
2¼ - 2½ lb Salmon Filet Skin On
2-3 Tbsp Dark Brown Sugar (use your preferred amount)
Kosher Salt to Taste
Coarse Ground Black Pepper to Taste
Extra Virgin Olive Oil
Season both sides of the salmon with kosher salt and black pepper. Drizzle some olive oil in an oven-safe baking dish. Place the salmon filet skin side down. Rub the brown sugar on the top of the salmon filet. Bake at 400 degrees until 145 degrees in the center.
Mango Salsa
1 Mango Diced
½ Beefsteak Tomato Diced
3 Scallions Finely Chopped
¼ cup Minced Fresh Cilantro
1 Pressed Garlic Clove
Juice from ½ a Lemon
Juice from a Whole Lime
2 Tbsp Extra Virgin Olive Oil
Kosher Salt to Taste
Coarse Ground Black Pepper to Taste
Mix all ingredients together and let sit for 10 minutes before topping the fish.
